Add flavour to your veges with this delicious sesame carrot salad. The sesame oil adds a nuttiness, the yuzu (or lemon) and vinegar add a tangy-ness, sultanas add a nice bit of texture and delicious chunks of plant based feta adds creaminess. This will fast become one of you go-to salads for the summer, I know it's one of mine!
Ingredients:
1/4 cup toasted pinenuts
1/4 cup sultanas
1/4 cup dried cranberries
4 carrots, washed and grated
120g vegan feta
2 tbsp toasted sesame seeds
Fresh mint or basil
Dressing:
50ml sesame oil
3/4 tbsp yuzu
1/2 tbsp sugar
25ml olive oil
1 1/2 tsp balsamic vinegar
- Combine all of the ingredients for the dressing in a jug and whisk until thoroughly combined - set aside.
- In a large bowl add the carrot, sultanas, dried cranberries, feta and toss until evenly distributed. Add the dressing and mix again.
- Sprinkle the toasted pinenuts, toasted sesame seeds and fresh herbs.
- Store covered in the fridge for a couple of hours to let the flavours develop - you can eat it straight away but I think it tastes better refrigerated!
